Seasoned to Perfection; an invitation to lunch

A synergy of dishes, hosted by Gusbourne

Hosted at Gusbourne Estate, on Friday 11th October join us for a special one-off culinary collaboration with the critically acclaimed Grove of Narbeth and our Michelin stared Àclèaf head Chef Scott Paton .

As part of PoB Hotels' 'Seasoned to Perfection' series, Gusbourne will be welcoming Head Chefs, Doug Balish and Scott Paton to prepare a specially curated four-course lunch, showcasing the distinct culinary styles of each chef and their restaurants.

Alongside this amazing set-menu, there will be a pairing of selected Gusbourne still and sparkling wines to complete your day on the estate.

You’ll be welcomed to Gusbourne with a beautifully chilled aperitif before setting out for a guided through the estate, and indulging in specially created canapés amongst the vines with the opportunity to meet both chefs Balish and Paton. Then head back to Gusbourne’s cosy tasting rooms to sit down to a four-course lunch showcasing the distinct culinary styles of each chef and their signature dishes from their respective restaurants. Each course will be partnered perfectly by hand-selected Gusbourne still and sparkling wines from the cellar.

Why do you love wine and food pairing in autumn?

"The arrival of a new season is always exciting when it comes to food and wine pairing – and autumn in particular is a wonderful time of year; the glut of earthy, rich seasonal ingredients brings such depth and warmth to the dishes we like to serve.

What makes Gusbourne wines suited to the season?

“At Gusbourne, we’re focused on crafting wines which are incredibly gastronomic: thanks to their structure and complexity, our still and sparkling wines are very adaptable when it comes to matching autumnal ingredients – from rich and earthy root vegetables to the distinctive flavours of game and mushrooms.

Tell us about the PoB dinner and working with new chefs.

“I’m excited to be working alongside such talented chefs for the PoB Seasoned to Perfection dinner. Each chef brings their own unique approach to flavours and textures in the kitchen – and this, in turn, challenges me to select a wine to really complement their dish.

“These dinners also offer a special opportunity to showcase rare gems from our cellar or bottles which are not typically available outside the estate."

How do you approach such partnerships?

“I find the style of each collaboration is unique. Sometimes, we begin with a detailed dialogue over dishes and details; on other occasions, I have a lighter-touch involvement, taking inspiration from a star ingredient or garnish. But - however we approach the menu - I always find it so exciting to experience the relationship between our wines and different cuisines. You always discover something new.”
